Abstrak

The use of brown seaweed for the industry is mainly based on the chemical content contained in seaweed such asalginate, jelly, and carrageenan. The main component of seaweed is carbohydrates. Hydrolysis is a process carried out tomake polysaccharide molecules into simple sugars such as glucose and galactose. This study aims to look at the effect ofenzyme concentration and incubation time on the hydrolysis of alginate waste substrates using cellulase enzymes. Theprocess of hydrolysis of alginate waste flour produces sugar content, which was previously carried out by ultrasonicpretreatment. The hydrolysis process uses cellulase enzymes with various enzyme concentrations (8, 10, 12, 14 and 16 U/mg)in a 7% substrate and variations in incubation time (84, 96 and 108 hours). Analysis of reducing sugar content using a UVVisibleSpectrophotometer with a wavelength of 575 nm. The highest reducing sugar content was obtained at 96 hours withan additional concentration of 12 U/mg enzyme (6.55%).
