Abstract


Shallots are one type of plant that is often used as a spice from various types of cuisine in Indonesia.
According to statistical data obtained from the South Sulawesi Trade Office, the average amount of shallot production in
2016 was 96,526 tons. By looking at the amount of shallot production, this is an obstacle for the traders of red onions in
the traditional market because onions can only last about 6-10 days, and with that some of the traders process it into fried
onions. At the moment there are many ways that can be used to drain fried onion oil, among others by traditional
methods and also the existing fried onion oil cutting machine but the production capacity of the onion is only 13,912 Kg /
Hour. The modification of the fried onion oil cutting machine is designed to increase the production capacity of fried
onion oil. This engine component consists of an Outer Tube, Filter Tube, Tube Cover, Shaft, Electric Motor, Belt, Pulley,
and Bearing. The working principle of this machine is very easy, that is the fried onion is inserted into the filter tube in
the oil storage tube. The filter tube is driven by an electric motor, so that the remaining oil will be blown from the fried
onion to the storage tube which then exits through the oil drain. Machine testing aims to find out whether the machine
successfully increases the production capacity of fried onion oil extraction. The fried onion oil slicer machine was tested
with several samples of freshly fried onions weighing 1 - 2 Kg / once of draining using a stopwatch. The fried onion oil
cutting machine successfully drained 38.903 kg / hour of fried onions.
